What Is Schnitzel? What Makes Brinjal Schnitzel So Delicious?

To put it simply, schnitzel is a thin slice of meat, tederised, breaded and fried until crispy and golden brown. The dish finds its origin in Germany. Usually, a schnitzel has a crunchy outer layer, with a melt-in-your-mouth meat filling. And that’s where brinjal wins the game.

Due to its shape and size, you can cut a brinjal into thing slices and yes, it already has the soft texture that makes it a perfect ingredient for veg version of schitzel. And guess what, you can also have this brinjal schnitzel as a pakoda with rice and dal. In other words, you can replace the quentessential Bengali beguni (baingan fritter) with this dish for your desi meal. Now, without wasting much time, let’s jump into the recipe.

How To Make Brinjal Schnitzel | Baingan Schnitzel Recipe:

To start with, prepare a dry batter with kalonji, white sesame seeds, poppy seeds, bread crumbs and salt. Next, prepare a semi-thick batter with rice flour, garlic powder, amchur powder, red chilli powder, garam masala powder and some water.

Next take a slice of baingan, dip in the liquid batter, coat well in dry batter and deep fry until golden brown in colour. And in no time, you have a delicious, crispy brinjal schnitzel ready to be relished.

Now, if you want to have a schnitzel platter, make sure you pair it with a dip and some salad for a complete meal. Chef Goila has shared an easy yogurt dip as well.
