Just as good french fries require no ketchup and good vegetables no more than salt and olive oil, a nice slice of bread or loaf cake needs no adornment. But, as my son often reminds me, needs and wants are not always the same thing.

Sure, that quick bread might be just fine without any topping, but would a schmear of cream cheese, swirl of butter or dollop of jam add a little something special? Maybe! That’s especially the case in the days after a loaf is baked, because, let’s face it, most of the time there are leftovers. A quick toast and spread of your choice can breathe new life even into a sliced loaf that is edging toward stale, not to mention add enough heft to turn it into more of a meal.
